Cinnamon, Apple & Blueberry Pancakes

Are you looking to spice up your usual pancakes? We’ve got you covered with this simple but packed full of flavour recipe.


Makes 6 pancakes:



1 medium egg

250ml of milk

2 tsp vanilla extract 

1 medium apple, shredded

65g butter, melted

¼ tsp baking powder

150g plain flour 

1tpsb caster sugar 

½ tsp ground cinnamon 

200g Fresh Blueberries



  1. Mix egg, milk, vanilla extract, apple and butter together in a large bowl. 
  2. In a separate bowl sift baking powder, plain flour, sugar and cinnamon together. 
  3. Mix the dry ingredients in the apple mixture until all is combined. 
  4. Over medium-high heat, lightly oil a frying pan
  5. When heated, pour batter into the pan to make your pancakes
  6. Cook until both sides are light brown.  
  7. Serve up on a plate, stacked up high and topped with fresh blueberries
